Southern Austria is known for its dark green and tasty pumpkin seed oil. With its high concentration of vitamins, minerals, micro elements and unsaturated fatty acids, it is a typical regional speciality and is mainly used with salads. But you will be surprised how it harmonizes with sweet dishes as well. Here is Christian Terler’s ice cream speciality:
Pumpkin seed brittle ice cream
Caramelize 50 g sugar in a pan, add 100 g pumpkin seeds, stir and spread onto a baking paper. Be careful, it’s very hot!
Let it cool down and then chop it up.
Mix well but quickly 1 litre vanilla ice cream with 1/16 liter pumpkin seed oil and then fold in the chopped pumpkin seed brittle. Keep 1 – 2 tablespoons for decoration.
Put the ice cream in the freezer for about 1 hour, portion it and decorate it with brittle.
